Vegan Mushroom Gravy – 5 Minute Magic

Hello Vegetarian Carnivores! Welcome to recipe #2 of my 2019 Thanksgiving inspired series! Last recipe I shared with you guys was a lower carb mashed potatoes that I made partly with cauliflower, and what better way to complete a delicious mashed potato dish than with a thick and creamy gravy? That’s right – we are learning how to make my super simple vegan mushroom gravy today!

Growing up, I was obsessed with potatoes in all forms. I mean, who doesn’t love potatoes? Mashed, fried, baked, spiced, roasted, boiled…I mean it takes special skill to make a potato taste bad. But gravy was a whole other story. I loved mashed potatoes and gravy, but it was always so hard for me to find a vegetarian gravy. Everything at the stores had a chicken or turkey or beef broth and it felt like I would never be able to have a delicious gravy. And even when I found a couple of vegetarian gravy options at the store, I was always upset to see the the ingredient list full of preservatives and stuff that, frankly, served ZERO purpose there. I didn’t feel good about putting that stuff in my body. After doing a bunch of research into gravy and reading tons of other plant based bloggers’ ideas and recipes, I finally found a recipe that I was able to adapt to make my own.

Gravies are traditionally supposed to be completely smooth, but I love a little texture in mine. So after creating the perfectly smooth base, I added a few sauteed mushrooms, just for a little bite. You can feel free to leave that out – it is just the last step anyway.

For this gravy, we are going to get our savory base with a hearty vegetable broth, nutritional yeast, and mushroom seasoning. I used Better than Bouillion base and Trader Joe’s mushroom seasoning for this. And then we are combining all the other ingredients and just whisking until the mixture comes to a boil. It is really that simple! Let’s get started.

Ingredients

  1. 2 cups vegetable broth
  2. 1 tbsp garlic powder
  3. 2 tbsp nutritional yeast
  4. 1 tbsp mushroom seasoning
  5. 1/4 cup all purpose flour
  6. Fresh cracked pepper
  7. Salt, to taste
  8. 3-4 crimini mushrooms, sliced and sauteed lightly (optional)

Instructions

  1. Combine all ingredients except sauteed mushrooms in a saute pan and whisk continuously so no lumps form.
  2. If the gravy is too thin, slowly add flour and keep whisking until you get a good consistency.
  3. Add the sauteed mushrooms in last and serve over mashed potatoes!

Results!

This gravy is so simple and quick to whip up! No more store bought, ingredient analyzed gravies ever again! With such a short and regular ingredient list, you can have gravy anytime now!!
