Roasted Brussels Sprouts and Carrots – Colorful Side Dish

Hi Vegetarian Carnivores, and welcome to recipe #3 of my Thanksgiving 2019 series! Today we’ve got a super simple but super delicious side dish that you can whip up to add a bright pop of beautiful color to your Thanksgiving table. And at 5 minute active time and 15 minutes passive time, there is no excuse at all for not making this nutritious and delicious side dish. Let’s get started on my roasted Brussels sprouts and carrots.

My Vegetables Choice

For this dish I decided to add even MORE color to my dish by choosing purple carrots instead of the traditional orange. All carrots are chock full of nutrition, like fiber, beta carotene, potassium, and vitamin C, but what makes purple carrots different is the presence of an antioxidant called anthocyanin. Anthocyanins are classified as a polyphenol, and help prevent oxidative stress buildup in your body. They help reduce inflammation and are a great nutrient to include in your diet. So while I initially chose the purple carrot for the color variety, turns out the color makes the already healthful food even more healthful!

Brussels sprouts are one of my favorite cruciferous vegetables. They are so easy to cook and taste great with minimal effort. Roasting them is one of the best ways to cook this delicious vegetable, and so that is exactly what I did here. Using minimal oil ensures that the Brussels sprouts char a little and crispen around the edges to get that perfect bite every time.

Let’s get started!

Ingredients (4 servings)

  1. 1 lb Brussels sprouts, halved
  2. 3-4 large purple carrots, sliced lengthwise
  3. 2 tbsp garlic powder
  4. 1 tbsp smoked paprika
  5. 2 tbsp olive oil
  6. Salt, to taste
  7. Pepper, to taste

Instructions

  1. Toss all ingredients together in a large mixing bowl, making sure all pieces are coated evenly.
  2. Spread out on baking sheet and bake for 15 minutes.
  3. Enjoy!

Results!
