Let’s say hello to your new favorite breakfast: pumpkin spice overnight oats.
Why you will love these overnight oats
Overnight oats are a staple in my house. They are so simple to make. I love taking just 2 minutes at night to throw all the ingredients together in a travel mug. I can take it on the go in the morning when I go to work. It’s an easy and healthy way to help me hit my protein, omega 3, and gut friendly fiber goals.
Lately though I had been feeling a little bored with the same old way of making overnight oats. So I thought why not jazz it up and come up with something seasonal? This one has all the flavors that we love in the fall, but with the same hearty and satisfying end result. Enter: pumpkin spice overnight oats.
Pumpkin spice, I’ll admit, is a hit or miss flavor blend for many people. One of my friends can’t stand it because he can’t stand cinnamon (I don’t get it, but it is what it is). If you find yourself falling into that camp, please know that you can isolate the spices in pumpkin pie spice to use the ones you like most. I happen to like the whole blend so it’s easier for me to just use the blend.

Sweet Potato- Canned or roasted(as I’ve done in this recipe just to be a bit more bougie) sweet potato is a great pattern break from pumpkin puree. If you feel like pumpkin has been a bit overdone, give the sweet potato a chance and let your mind be blown.
Pumpkin Pie Spice- You can’t have fall flavors without the blend of cinnamon, nutmeg, cloves and allspice, that is pumpkin spice. I use a blend by Imperfect Foods. These flavors give the oats a unique flavor because oats themselves are a completely blank canvas. So go ahead and give into your fall spooky vibes.
Maple Syrup– I use maple syrup for everything because it is my go-to sweetener since I don’t care much for sugar. That being said, it deserves a special mention here because maple is a lovely fall flavor and deserves a spotlight here.
Dark Chocolate and Sea Salt- I lumped these two together because together they can make any dish taste indulgent with minimal effort. And that is exactly what this recipe is: effortlessly indulgent.
How to make pumpkin spice overnight oats
I’ll make this entirely simple for you. Mix everything together in a mason jar (or really whatever you want). Chill in the fridge. Top with melted chocolate and flakey sea salt for a flavor break. Chill again to set the chocolate and enjoy!


Pumpkin Spice Overnight Oats- The Best Fall Breakfast
For one personal portion of overnight oats
Instructions

If you are using canned sweet potato or pre-roasted sweet potato, skip steps 2 and 3.

Preheat oven to 425F. Wrap your sweet potato in foil and dry roast it for 30 minutes (no oil).

Take sweet potato out and scoop out 1 tbsp of puree

In a mason jar combine oats, chia seeds, sweet potato puree, pumpkin pie spice, vanilla extract, maple syrup, and milk. Mix well together.

Chill for 15 minutes.

Prepare the chocolate crust by microwaving chocolate chips in intervals of 15 seconds. Stir after each interval to prevent burning, until you get a fully melted consistency.

Pour chocolate over the thickening oats/chia base and sprinkle with flakey sea salt. Chill again for at least 15 minutes.

Crack the chocolate layer when ready to enjoy.
